Rapid determination of ascorbic acid
For the rapid determination of ascorbic acid in flour there are various methods, including

١- كاشف توبرس
يعطى نقاط او بقع ءات لون ازرق .
1) By means of Tauber reagent there appear -in the presence of ascorbic acid- in a few seconds blue dots in the flour, which can be well detected optically. The flour color changes only slightly.


٢- محلول اليود
يتغير لون الدقيق بالكامل الى الاسود او الارجوانى الداكن عدا نقاط تواجد الاسكوربيك تكون بيضاء كما هى .
2) Another method is to perform a starch- proof by an iodine solution. Through the iodine the flour changes its color very quickly to black or dark purple. At the places in which other additives are present (eg ascorbic acid) the agent takes no effect and is resulting to white dots, which are sharply demarcated from the background.
