تحدث طفرة الخبز / طفرة الفرن اى ما يعنى ارتفاع وزيادة حجم الخبز داخل الفرن اثناء عملية الخبز بشكل أساسي بسبب تمدد الغازات المحبوسة داخل العجين أثناء عملية الخبز.
1. Carbon Dioxide:
· Generated by yeast during both aerobic and anaerobic fermentation of glucose in the dough.
