عملية طحن القمح لها هدفان اساسيان هما :-
• to separate endosperm of the grain from bran
and germ

• to reduce dimensions of endosperm particles
for fine flour particles
تقليل وتصغير حجم جزيئات الاندوسبرم للحصول على جزيئات دقيق ناعمة تصل الى اقل من ١٤٠ ميكرون

Austria – also coarser flours
